Chicken & sweetcorn soup is one of my favourite soups. With only a few ingredients you can make this yummy soup. It is perfect for lunch, a snack or even dinner with only 233 calories or 5 Weight Watchers SmartPoints a serving, how can you go wrong?!
*You must use creamed style corn in this recipe*
Ingredients
- 4 oz Chicken Breast
- 1/2 tsp. finely chopped fresh Ginger
- 2 egg whites
- 2 tbsp. milk
- 1 tbsp cornflour
- 2 1/2 cups stock
- 8oz can creamed corn
- salt and pepper, to taste
- finely chopped scallions, to garnish
Instructions
- Chop up the Chicken breasts and mix with the ginger.
- Beat the egg whites until they are frothy, add the milk and cornflour to the eggs. Mix until it is smooth. Add the chicken to the mixture.
- In a saucepan, bring the stock to a boil. Add the creamed corn to the stock and bring to a boil again.
- Stir in the chicken mixture, add seasoning to taste. Continue to stir until well mixed.
- Garnish soup with finely chopped scallions.
